At our house, we take Bar-B-Que very seriously. We have always taken great pride in offering the highest quality, best tasting and just dog gone good Southern Illinois Bar-B-Que. Our pork butts and beef brisket are slow smoked for 12 to 14 hours over Southern Illinois apple wood, with just enough smoke -but not too much! - to give it that perfect taste. Our pork steak is a 16 oz. center cut, seasoned and slow smoked and finished with our Hicks Dark Bar-B-Que Sauce. Hope you’re hungry! It’s a big meal. Our ribs are 2 1/2 lbs. of top loin (baby back). They are dry rubbed with Hicks Rib Rub, slow smoked with apple wood for 4 1/2 hours. We finish with a light glaze of Hicks Bar-B-Que Sauce. Our sides are prepared daily. We think that you will love our sweet and sour slaw, bar-b-que baked beans and potato salad. Try our slaw on top of your pulled pork sandwich for an extra treat. Thank you for visiting our house.
